In a medium
pot, sauté re-hydrated beef and vegetables in oil for 2 minutes.
Add 2 1/2 cups water (use reserve from re-hydrating vegetables)
and bring to boil. Reduce heat and simmer until meat is tender,
about 10 minutes. Add spices, dates and lemon juice. Simmer 5
minutes, stirring frequently. Serve hot over couscous. If
cooking over a single burner, the water for the couscous should
be brought to boil before the spice and date mixture is added to
the beef and vegetables.
