A tajine is a flavorful North African stew and the name comes from the pot it is cooked in. Tajines can be served with couscous or rice. Hummus is an ideal appetizer to go with this dish.

In a medium pot, sauté re-hydrated beef and vegetables in oil for 2 minutes. Add 2 1/2 cups water (use reserve from re-hydrating vegetables) and bring to boil. Reduce heat and simmer until meat is tender, about 10 minutes. Add spices, dates and lemon juice. Simmer 5 minutes, stirring frequently. Serve hot over couscous. If cooking over a single burner, the water for the couscous should be brought to boil before the spice and date mixture is added to the beef and vegetables.
